Fruit Bread

I like this fruit bread quite a lot. Too much so maybe, it's hard to resist. 
 
 
Fruit Bread
 
Ingredients
600 grams dried fruit (I used apricots, figs, dates and sultanas )
2 cups orange juice
1 tsp bicarb
3/4 cup brown sugar
2 eggs
2 cups self-raising flour
2 tsp cinnamon
1 tsp ground ginger
 
Method
Preheat oven to 180 degC
Grease a loaf tin and line with baking paper
Combine fruit and orange juice in a large saucepan over a medium heat.
Cook for 20 minutes. Stirring occasionally.
Remove from heat and stir in the bicarb.
Allow to cool slightly. About 10 minutes.
Stir in eggs, sugar, flour and spices until combined.
Spoon mixture into prepared tin and smooth the top.
Bake for 50 to 60 minutes or until cooked when tested with a skewer.
Remove from oven and stand in tin for 5 minutes.
Turn onto a wire rack to cool.
 

Tastes great sliced thickly and served as is but adding a spread of butter takes it to another level. Well I think it does. Good thing there is no butter in the recipe.

This looks nice, Tracy. Similar to the tea bread that Anna makes - it doesn't have oil or shortening, either.
