More Soups

Economical, easy, often healthy. What's not to love about soup? Two of my children could give you a myriad of reasons why soup is not a great meal but they can eat the bread I say.

I made two pots of soup yesterday. One for dinner and one for the freezer. The first soup went into the freezer not because it was the lesser soup but because the other one was too hard to resist.

Sweet Potato and Red Lentil Soup
Ingredients
2 large sweet potatoes, peeled and chopped
1 cup of red lentils
2 small potatoes
Enough water or stock to cover.
Method
Place all ingredients in a large pot, bring to the boil and cover.
Reduce heat and simmer until the vegetables are tender.
Puree.
This serves about four people and freezes well.
Sweet Potato and Red Lentil Soup

The other soup which was a spicy broccoli. It must be good for you because it really is not very pretty to look at. I know I certainly would have turned my nose up at this when I was younger. Now I can see beyond the obvious and give everything a try before I decide if I like it or not.

Spicy Broccoli Soup
Ingredients
500 grams broccoli, chopped
2 cups water or stock
2 small chillies
1 onion, diced
1 clove garlic, chopped finely
1 tbsp olive oil
Method
Heat olive oil over a medium heat and add onion, chillies and garlic. Fry gently for a few minutes until the onion is softened.
Add the stock/water and bring to the boil.
Add the broccoli bring back to the boil. Reduce heat, cover and simmer until the broccoli is tender.
Puree

(this is one ugly soup but it tastes great)

I don't make many soups. They don't appeal to my 14 yo son neither do stews which is really annoying because hubby and I love them.

Thanks for sharing the recipes, they both look so good. Might make them soon. I am not keen on chillies. Do you know if there anything I can replace them with and keep the flavour?

Fortunately, my kids love soup, so we have soup and bread at least once a week for the main meal, normally Sunday night. It's a great way to get my target 1-2 vegetarian meals a week.
These soups look great, I might try the broccoli soup very soon.

My family loves homemade soup we have it all year long, vegie soup is great to make you can use all those vegies that need to be used up in a hurry AND you can hide the lentils also. Your broccoli soup sounds yummy.

yum! we live on soups in the winter. i feel guilty sometimes because that's all we eat and they are always vegetarian- my poor husband. but they are so good, easy to whip up and warm warm warm! xo m.

I think I will give the sweet potato one a go, however I don't think the shrek inspired broccoli one will appeal to the boys.
