Zucchini Choc Chip Cookies
I don't have any zucchini in the garden yet but the grasshopper threat seems to be subsiding so there might still be time to have a harvest this season. I was however the beneficiary of a couple of zeppelin size zucchini that would have been too big and tasteless to serve as is. So far I have made some zucchini choc chip cookies which are delicious. The recipe is easy, and turns out a moist and chocolatey biscuit which kids (big and small) love. They aren't too sweet and have a hint of cinnamon and nutmeg.They also use some wholemeal flour so are probably a little healthier. I think they tastetoo good to be healthy though. The other zucchini is destined for chocolate zucchini cake/muffins which I will show next time.
The recipe comes from Barbara Kingsolver's book Animal,Vegetable,Miracle which is a good read if you are interested in finding out about local,seasonal eating.
Let me know if you try the recipe or have tried it or something similar, I'm always after interesting ways to use fruits and vegetables.

Hi again Tracy-
I have heard of zucchini & choc. before in baking but had never actually seen a product before - these look very tempting! I couldn't click through on your links, but would love the recipe :-)
They do look nice.
I read on another blog that they were intentionally leaving a few zucchini grow to zephyr size for use in making dog food. No matter how carefully you pick, it seems like you always get a few of those massive ones, so it's handy to have ideas for how to use them up.

oh Tracy I'm excited to find you again. I used to follow your other blog and was sad when you disappeared.
Those biscuits sound good I'll have to make some as I have a large zucchini in the fridge right now.
